Spaghetti Squash

Once I got up the courage to try it, spaghetti squash became one of my favorite low calorie/low point foods.  For only 0.5 points, you can have up to 9 ounces (cooked).  Or, for only one point, you can have up to 13 ounces.

It’s very simple to cook.  You just cut it in half length-wise, place it cut side down on a baking sheet, and bake it for about 35-40 minutes at 375 degrees or until the squash is tender enough to scrape out with a fork.  The temperature and times may vary depending on your oven, of course.

My favorite way to eat it is very similar to how I would normally eat pasta.  I either add spaghetti sauce, or just add I Can’t Believe It’s Not Butter spray, a tiny bit of salt, and a little Reduced Fat Parmesan Cheese.  In fact, the second way is my favorite.  At times, I’ll split my serving into two and have it both ways.

It’s a great food for when you’re feeling hungry and are running low on points!

    Thanks Pamela. I’ve tried spaghetti squash a few years ago but completely forgot about it this time around. I’m going to pick some up tonight and have it for dinner. I need ideas to stretch out my 22 Points since it’s getting more and more difficult.
