I’ve made a goal for myself this weekend. Before starting Weight Watchers, one of my favorite foods was this tuna salad that my mom always made. It contains those tiny, tiny pasta balls (ancini de pepe), tuna, Miracle Whip, and relish, and then it’s refrigerated so that it’s really cold. YUM. Of course, with the mayo and pasta, it’s not the most point friendly. I’m sure that my serving sizes didn’t help the matter. I LOVED this pasta. Hence the fact that I haven’t dared to make it ever since.
My mission this weekend is to make it point friendly and/or at least see what is actually a reasonable serving size. I don’t like fat-free Miracle Whip (I don’t normally like Miracle Whip at all, but it’s the only thing I like in tuna), so I’m going to use the low/reduced fat version. I might also experiment with a different kind of pasta. Maybe it would taste all right with some of the lower point pastas, and perhaps if I use rotini or penne or something similar then I’d feel like I was eating more. I do love the texture of the ancini, though. So I’m going to be doing a bit of experimenting this weekend to see if I can create a recipe that’s more point friendly with a decent portion size.








They now have an Olive Oil mayo that is to die for!!! The taste is delicious & it is 45 calories. It doesn’t have that foreign substance taste of low fat mayo. You should try it! I like pasta salad with tuna, also. I like the flavored Star kist packs, they have a lemon pepper, it is delish! Good luck, let us now how it goes!
Thank you for the tips, Ella! I’ll have to look for that olive oil mayo and then the flavored tuna. I did try a barbecue flavored one once which was okay, and then a teriyaki one that I really loved. Unfortunately, I’ve had trouble finding it since.
