Another Weird Concoction

So I’ve decided to call my latest weird concoction “Mardis Gras Couscous” just because it’s rather colorful and because I just pretty much threw in everything that I could think of, or that caught my eye at the store.

I got the idea from the other various concoctions I’d tried with my whole wheat couscous.  I had tried it with lean ground turkey and lean ground beef and decided that I liked the consistency of the ground beef better.

I cooked the 96% lean ground beef without using any added oil, just adding a bit of Pam (not me, the cooking spray!) to the pan.  When it was almost done, I started the veggies in another pot on the stove.  I first put in a can of low sodium/no salt added diced tomatoes.  Then I added all of the sliced/diced veggies:

  • green bell pepper
  • red bell pepper
  • yellow bell pepper
  • orange bell pepper (you start to see the colorfulness)
  • sweet yellow onion
  • red onion
  • Zucchini
  • Summer/yellow squash
  • carrots

I threw so much stuff in the pot that I could be leaving something out….I let that pot cook until I felt that the veggies were done to my liking.

After I made sure that my ground beef was done, I mixed in a bit of Garlic and Herb Mrs. Dash, 1/4 cup of fat-free sour cream, some cumin, and a little bit of dijon mustard.  I then poured the veggies on top of the ground beef and mixed it all together.

I let that cook while I made my couscous (one cup uncooked) in the other pot.  When the couscous was done, and I thought the veggies/meat were done, I poured the couscous in on top and mixed it all together.  At this point, I realized that I really need to get a bigger pan, since it all kept trying to escape.  :)   I then cooked it some more to soak up some of the liquid.

I have to admit that it turned out pretty good – at least I think so!  It also seemed to freeze pretty well.  I had some tonight that I had frozen and it was still good.  In fact, it might have been better.

The best part was that I was able to get 7 one-cup servings out of it, at only 4 points a serving (according to my Weight Watchers Recipe Builder)!

I’ve been thinking of other things to add to it, and think I will add corn and peas next time (and maybe cauliflower and broccoli).  My thinking is that the more low point veggies I can throw in, the more servings I can get and the lower the number of points per serving!  :)

And an added bonus is that since I’ve been taking a bowl of this to work for lunch, I’ve cut down quite a bit on the sodium I was getting from my microwave hamburger helper.

    Looks really good. You know I’ve never had couscous but did buy some last week so will need to try it sometimes this week, will keep your recipe in mind.

    I do a lot of concocting too, but my stuff has all been terrible so far so I give them all horrible names like “Clyde with Rice” or “Edgar Chicken”.

    Hanlie, that’s the best part – is that you don’t have to add the meat. In fact, I fell in love with the couscous before I ever tried it with meat.

    Hopefool, I completely know what you mean. That’s why I don’t cook very often. As I was making this, I just kept praying “please taste okay, please taste okay.”

    OMG, Pamela, I make something that’s nearly identical! I add a little fresh grated parmesan cheese when I serve it and it’s a fantastic all-purpose side dish for nearly any protein we’ve just pulled off the grill!

    Now I want couscous…

    Prepare this and bring it to me immediately!
