Once again, this is a mix of thoughts that are on my mind, so I wasn’t sure what to call it. Maybe I’ll think of something later.
I hope everyone had a fantastic weekend! Mine was pretty good. For once, my health and the weather cooperated and I was able to go hiking on both Saturday and Sunday. Saturday was beautiful – in the 70s – and then Sunday was pretty darn chilly! Saturday I only had to wear a t-shirt and then yesterday I was bundled up in a coat, scarf, earmuffs, gloves, etc. I felt so sorry for the plants and flowers that were starting to pop up and bloom!
It was really nice to be out walking again. There’s just something about the place I go to that relaxes my soul. There’s always something new to see (birds, etc.). I got my errands done, hit the grocery store, and Wal-Mart and Gordman’s. My grandma’s 80th birthday is coming up at the end of the month and my mom said she wanted a current picture of me. So I bought a pretty black frame that has its own base to stand on and has two frames in it. One is vertical, so I’m going to put in the picture that you see to the top right of this page and then in the other horizontal frame, I’m going to try and find a picture of her and I together. Hopefully she’ll like it.
Yesterday, I cooked my couscous concoction again. It took me two hours! I went overboard a bit, though. Yes, apparently, it IS possible to go overboard on the veggie front. I started throwing veggies into the pot that I used last week and got a bit carried away. I eventually had to transfer it all over to my mom’s big stew pot, because I was running out of room. I also had to double the amount of tomatoes and couscous I put into it. I put in all the things I did last weekend, but added cauliflower, peas, and corn. Yummy, and I’m already contemplating what else I can add. I ended up getting 13 one-cup servings out of it (most sitting in my freezer right now) and each serving is still only 4 points. Sidenote: Sara, thanks for the tip on the parmesan cheese! I sprinkled a bit of the Kraft Reduced fat kind on top and wow it was delicious! Not quite the same as freshly grated, but it did the job! It’s been a learning experience. I have to admit it was kind of fun throwing stuff into the pot. It reminded me of when I was little and my brother and I liked to mix up odd concoctions of herbs and liquids. Ticked my mom off, because she’d have to clean out the dishes, but we had fun.
I’m over my cold, though my nose is still a bit runny. It could just be allergies. I’ve been joking to my mom that I’m going to go hang out in the pediatrics ward of the hospital to try and catch some more cold germs. Not funny, I know, but I’ve posted a lot about my ear problem (patulous eustachian tube), and while my head was congested with the cold, it didn’t bother me on a single day. I went from having this issue almost every single day for several hours at a time to not having it at all for two whole weeks. Talk about pure heaven! Unfortunately, it started bothering me again yesterday for a little bit, so I know that the full blown symptoms are probably on their way. It seems drastic, but I think a cold is the lesser of the two evils.
I had a follow-up appointment with my ENT tomorrow morning, but I canceled it. For one thing, I don’t have the extra cash. For another, I don’t really see the point to go in and spend 10 minutes and $100 for him to tell me that there’s nothing he can do for me. I’ve been in contact with people online who have seen specialists that have told them there’s nothing that can be done. So I figured I should save my time and my cash.
I’m still not feeling entirely myself. I’m not sure what my deal is. That’s the main reason that I haven’t been posting very much lately – at least not like I was there for a while. I don’t feel like I’ve done much except read lately. I’ve been extremely impressed with Mary Balogh’s books and she is quickly rising in my list of favorite authors. She writes regency historical romance books. You should see the stack of books that I’ve got waiting for me.
Exercise-wise, as I already said, I did pretty great this weekend. I even jogged for a few minutes (after making sure no one was around).
Food-wise, I did have an incident with some Hershey’s kisses, but overall, I did much better than I have been doing. I hope to see at least a couple of pounds lost on the scale tomorrow.
