A Miracle and a 2 Point PB&J

The miracle (which, amazingly, happens to not be the two point PB&J) is that I didn’t gain weight this week!  This is the first time in almost two months that I wasn’t up at least a pound!  Now, I was up 0.1 pounds, but I refuse to count that as a gain.  That is most definitely a maintain.  WHOOHOO!  It may not seem like much, but this is progress, people!

Now, the two point PB&J.  I usually eat Sara Lee’s 100 Calories and Delightful bread.  The kind I always get is the 100% whole wheat with honey.  It is only one point for two slices and I really like it. 

I then discovered that my local grocery store sells PB2 in their stores!  WHOOOHOO!  Two tablespoons of peanut butter for one point.  I stopped ordering it online quite a while ago, because even though I liked it, I never used it all fast enough to justify having to order four jars at once.  While I have to pay a few more cents to buy it at the store, it means that I can buy it jar-by-jar. 

I am a grape-jelly-on-my-PB&J kind of a girl.  Always have been and probably always will be.  I found Welch’s Reduced Sugar Grape Jelly in a squeezable bottle.  Based on the nutritional info on the jar I bought last week, it is zero points for one tablespoon, and one tablespoon is more than plenty for me!

1+1+0=2!! = Yum.

While it’s not the same as regular jelly and chunky peanut butter, it hits the spot when I’m craving a PB&J and don’t want to use a ton of points.  Now, I know some people would throw that all of those ingredients into their WW recipe builder, but I refuse to do that for a sandwich.  I just add up the individual pieces.

Now, I did stick the concoction I made last night into my recipe builder.  Yes! I cooked!  It started out small, but then kind of snowballed.  I first decided to cook some of the veggies I got at the farmer’s market on the stove in canola oil.  This is what I put in:

  • 1 Tbsp canola oil
  • a bit of Garlic & Herb Mrs. Dash
  • 1 medium summer squash
  • 1 medium zucchini
  • 1/2 candy onion
  • 1/2 red bell pepper
  • 1/2 green bell pepper

I then noticed a big bag of potatoes on the cabinet.  So I figured, what the hell, and chopped one up and threw it in, too.  I then saw that my mom left me a boneless/skinless chicken breast in the fridge.  Again, why not?  So I threw it on the George Foreman and when it was done, I chopped it up, too, and threw it in. 

Surprisingly, it turned out pretty good!  I put all of the ingredients into my recipe builder – the chicken was a little over six ounces, so I counted it as seven ounces – and for three really good-sized portions, it only comes out to three points!  I’m actually eating some right now for dinner:

Yes.  “You just have to believe.”  I hope you all believe in yourselves.  I believe in you.  And I believe that I CAN do this.

    LOVE LOVE LOVE your new attitude. This is the old Pamela that I know and love. :)

    I just got home from work and Costco (ugh!). Your dinner looks delightful. I’m heading off to the kitchen right now to see if I can make something similar.

    Wish I wasn’t allergic to all things peanut. Everyone talks about PB2 and I’d die if I ate it. Literally.

    I wish I could have access to this PB2 (other than online) It sounds like something I’d love in my shakes.
