Does anyone else out there love pancakes as much as I do? Not only do they taste great, but I always remember Saturday morning cartoons and my mom making pancakes for us. She liked to make Mickey Mouse-shaped ones.
Since I joined Weight Watchers in 2006, I rarely ate pancakes. In fact, I didn’t have them more than once or twice in the two years that I was perfectly on plan. Even over the last year in which I’ve pretty much “fallen off the wagon,” I didn’t have them more than a couple of times. They’re just too many points!
I was perusing the grocery aisles on my last trip and more than ever was paying attention to all of the things on display. Everywhere you turn there’s more sugar or fat! Candy on display at the end of this aisle, donuts on display at the end of that aisle, chips here, soda there, etc. etc. etc. “[Grocery shopping] is a battlefield” kept singing through my head.
But as I was walking down one aisle, something caught my eye. It was this:
One serving is 1/2 cup of the mix, and contains 190 calories, 3.5 grams of fat, and 5 grams of fiber. Yes, that’s only 3 points! Now if you’re watching your sodium or are avoiding artificial flavors, etc., this might not be for you, but I think they’re pretty delicious and are very filling. The recipe calls for 1 cup of mix to 2/3 cup water, but I just halve it and only make one serving at a time. Works like a charm.

They sound good, but I make my own from either Lori’s recipe or Mizfits. Both are good, but probably a little more than 3 points LOL

or a good one is:
1/3 -1/2 cup egg whites to get it to the correct consistency
1 cup cottage cheese
1 cup uncooked oatmeal
Optional:
a sprinkle of cinnamon
a splash of vanilla
Grab your handy blender and dump the ingredients in, in the order they appear (otherwise the mixture will get all chunky). So, eggs in first, then start the blender. As it’s blending, pour in the cottage cheese, then the banana if you’re using it, then whatever sweeteners and spices you like, then the oatmeal. Once this is nicely blended, cook as you would pancakes, in a nonstick pan over medium-low heat.
