Two Things

First, I’m going to need you guys (pretty please?) to send up some prayers, cross your fingers, do the hokey-pokey, or whatever it is that you guys do when you really want something to go your way.  I’m really nervous right now.  Okay, I’ll admit it.  I’m downright scared.  It’s a little after 3:30 am and my dad just had a seizure and fell again.  This time right outside my bedroom in our upstairs hallway – not even 10 ft from the stairs.  He seemed okay when he got up and he went into his bedroom where I made him turn off the video game he was playing (I know – best thing for an epileptic, right?) and he went to bed.  But he’s got the door shut and I’m just praying that the seizures have really stopped.  I do know that he took his one set of meds 1/2 hr late this morning (er yesterday morning), so I’m hoping that’s all that it is.  I’ll have to set my alarm and get up and make sure that he takes them on time tomorrow.

But where my terror is coming in is that I’m so scared to leave him alone so long when I go to work tonight.  Normally, my mom and my hours overlap quite a bit.  I’m here when she’s at work and vice versa.

And he tried to argue with me that he was going to shovel tomorrow afternoon!  HA!  AS IF!  I threatened to call my mom and tattle.  Unless something else happens (knock on wood), I’m not going to tell her about these incidents, as I want her to enjoy her time away and not worry about us.  So please, keep your fingers crossed.

Second, I made my banana bread muffins again tonight.  I had two bananas that were too ripe to eat and I didn’t want to waste the money by throwing them out.  So I tweaked the recipe a bit and was going to try Smart Balance light butter (with flax) instead of the regular stick butter.  I also made more muffins so that they would be one point instead of two each (only 3 pts for two).  I noticed when they were done that while still delicious, they were a tiny bit drier than usual.  I thought that it either was the fact that I made more servings or that I must have cooked them a bit longer.  When I went to make my dinner later, guess what I found in the microwave?  The Smart Balance butter!  I had put it in there to soften it.  Someone (certainly not moi) left it out of the mix.  Oopsie.  Well, that’s one way to cut calories, huh?  The points – at least for one muffin – are still the same. Thank God I used a tablespoon of canola oil or it might not have been edible.

(I decided to be a little silly as I was coming in from taking out the trash tonight!)

    Well, I guess you can afford to put some spread on your muffin then! Good luck with your dad. How well I know the worry of what might happen when you’re away.
