
I was grocery shopping today and decided that I wanted to risk having cheese in the house. When I got to the cheese aisle, I immediately headed towards my favorite cheese as of late. Cabot’s 75% Reduced Fat Sharp Cheddar Cheese. I’m all about the sharp cheddar, so when I found this and discovered that it actually tastes good, you know I fell in love. Now, if they came out with a 75% Reduced Fat Reduced Sodium kind then screw love, I’d be in lust.

As I mentioned yesterday, I’m still buying various 100 calorie packs. What can I say? They’re handy! But I have made some great strides in the past couple of months.

Today was weigh in day and unfortunately, I showed a 1.1 pound gain. But surprisingly, I was very okay with it. While a bit disappointed, I actually had an extremely positive attitude about it all.
First, I had Mexican (chips/salsa, grilled chicken fajitas with sour cream and guacamole) for lunch and then the leftovers for dinner on Saturday. I snacked way more than I should have late Saturday night – not crazy off-plan things (like ice cream), but definitely more than I should have had and didn’t count it. Hi all! Can you believe that it has been 200 weeks since I joined Weight Watchers? I can’t! Time sure flies. On June 5th, it will have been four years. FOUR YEARS?! What the heck? Where does time go?

Oh the irony of it all. When I posted last night, I hadn’t actually eaten the cake yet. But I ate it, and have really had no desire to eat more. Hi all! I hope your weekend was nice! I feel like I’ve just been going nonstop. And in those few rare moments when my body wasn’t moving, my brain was.
My schedule (working nights, sleeping days) tends to royally jack with my system. I was tired Friday night, and knew we were thinking about going to the zoo on Saturday (which got rained out), so went to bed around 3:30 am.

When I got off work last night, I decided to make some meals for the remainder of the week (kind of like I did the Sunday before last), but this time I thought I’d share some pics.
I first mixed up a batch of one of my favorite go-to *EASY* recipes: Mexican Corn Bake. I can’t remember where I got the recipe from, but I think someone posted it on the WW message boards once upon a time. I’ve been making this for a couple of years now.

By 10am this morning, I had been to Wal-Mart, Wal-Mart Market, the bank, Whole Foods, and Michaels. I have one or two more things to pick up later, but I can pretty much say that I have all of my errands done. I have a load of dishes going in the dishwasher, all of my groceries put away, and am feeling like I got a lot accomplished. Of course, all of this is a product of the fact that I couldn’t sleep and have been up since 3am. I sense a nap in my near future.

Does anyone else out there love pancakes as much as I do? Not only do they taste great, but I always remember Saturday morning cartoons and my mom making pancakes for us. She liked to make Mickey Mouse-shaped ones.
Since I joined Weight Watchers in 2006, I rarely ate pancakes. In fact, I didn’t have them more than once or twice in the two years that I was perfectly on plan. The miracle (which, amazingly, happens to not be the two point PB&J) is that I didn’t gain weight this week! This is the first time in almost two months that I wasn’t up at least a pound! Now, I was up 0.1 pounds, but I refuse to count that as a gain. That is most definitely a maintain. WHOOHOO! It may not seem like much, but this is progress, people!
